Ingredients
- 1 lb lean ground beef (90%)
- 8 oz elbow macaroni
- 1 small onion, finely diced
- 1 can (15 oz) tomato sauce
- 2 cups low-sodium beef broth
- 1 cup milk
- 1 1/2 cups shredded cheddar
- 3 oz baby spinach, chopped
- 1 tsp garlic powder
- Salt and pepper
Steps
- Brown the beef and onion in a large pot over medium-high heat, breaking up the meat, about 6 minutes. Spoon off any extra fat.
- Stir in the garlic powder, tomato sauce, broth, milk and macaroni, and bring to a boil.
- Lower the heat, cover and simmer 10–12 minutes, stirring often so nothing sticks, until the pasta is tender.
- Stir in the spinach until it wilts, then the cheddar until melted. Season with salt and pepper and serve.
